Biochemist Aaron Dossey has built a new way to create a protein powder ingredient from a reliable and cheap raw material, crickets. This process tweak yields a superior cricket protein that’s fluffier, with mild aroma, fine texture and light flavor. A big advantage of this protein is that crickets are actually very clean animal — a big contrast to what people see in any poultry house or livestock barn. This is one of Dossey’s grant proposals that included insect protein as the basis of ready-to-use therapeutic food for use in international famine relief efforts. Raising crickets is still a very low-tech operation with lots of room for development.
