Sprouting garlic packed with heart-healthy antioxidants, say researchers
The way garlic sprouts may provide a useful way to improve its antioxidant potential. Often, old garlic bulbs that have grown sprouts are considered olden, dried and past their prime. But new research finds sprouted garlic has even more benefits than its younger counterparts. Although garlic, Allium sativum, has been known for its many health benefits, it has been less known that sprouting garlic is even more packed with heart-healthy antioxidants, says researchers. When green shoots grow from old heads of garlic, they make many new compounds, including those that protect the young plant against pathogens. Researchers based the study on sprouted beans and grains.
