Blackberry Juice Increases Probiotics in Milk

In a series of tests on blackberry juice and milk, researchers from Maryland found that adding 10% blackberry juice to milk containing probiotics actually promotes the growth of some friendly bacteria. Having said that, researchers presume that blackberry juice could be utilized as sugars by Lactobacillus species in milk and other slightly acidic environments. This effects of blackberry juice on Lactobacillus strains showed its natural antimicrobial properties that inhibit the growth of foodborne pathogens used in food processing. This latest study on blackberry juice and bacteria was performed with highbush blackberry. But bacterial benefit did not end with probiotics.
